BLT Salad {with avocado}

BLT salad

I love a good BLT, which is what inspired this salad.  Soon the days will be getting warmer and we’ll make that transition from eating warm, filling meals to cool, light meals.  Soup often graces our table in the dark cold days of winter, large family style.  As spring starts to turn, we trade in those large pots for big bowls of salad topped with bits of bacon, chicken, or fish to make a complete meal.

Don’t let this salad intimidate you.  Pop that bacon into the oven while you prepare the vegetables.  Within 15 minutes you’ll have a complete gourmet meal that’s sure to impress and delight even the pickiest of taste buds.
