Crock Pot Baked Potatoes

Remember my last post on baking potatoes?  A reader commented on how she used her crock pot for baking potatoes.  I thought that genius.  And so I tried it.  Amazingly simple.

 

Wash potatoes and pat dry.  Poke each potato with a fork once or twice, rub each potato with oil (I used olive oil..this step is optional but I think it makes a better potato), place in crock and cook on high for about 3-4 hours.  And Ta-DA!  Baked potatoes!  And best of all, the house is still cool, from not having to run the oven.
